By now, no doubt you’ve heard of cold-brew coffee. This trendy drink has infiltrated Floridian coffee culture: finding its way into local hotspots and chain retailers alike. But what’s the deal with cold brew? Why the sudden surge in popularity? And what, if anything, makes it different from your regular, run-of-the-mill iced coffee?

While it may seem akin to iced coffee, cold brew is an entirely different preparation of the humble coffee bean. Rather than simply adding ice to already-brewed coffee, cold brew takes patience: steeping the coffee grinds in water for a day or longer, allowing time to work as its percolator. While there’s nothing instant about this brew type, there are other benefits to this methodical brew process.

By allowing the beans time to release, cold brew cuts down on the bitterness and acid experienced with iced coffee, bringing out the sweetness of the bean. Cutting down on the acid and oils released during a standard, boiled-water brew, the irritants found in standard black coffee are nearly nonexistent in this phenomenal drink. It’s a smoother, milder sip, and ideal for even the most sensitive of stomachs. Just add a little sweet cream or water—depending on your tastes—and you’re good to go!
